While the films' writers were obviously responsible for leaving out many parts from the books, they aren't the only ones to blame. The truth is, Rowling set up too many plotlines and foreshadowed them simultaneously, hence when adapting the books, it's inevitable that at least some plotlines would be cut out. Aberforth is an example: He was foreshadowed in earlier books before becoming important in Book 7, but those foreshadows are rather vague that it's understandable of why they were left out in the films.
